This black bean dip is easy. You can either use canned beans or cooked from scratch. It doesnt matter. "
Black Bean Dip 1 can black beans (drained and rinsed) 1 tsp fresh grated ginger 1 smallish sweet red pepper chopped 1 tsp cumin 1 tsp coriander 1 - 3 Tbsp fresh mint chopped (best from early spring garden) 1 tsp olive oil salt and pepper to taste Put all in a blender - pulse but leave a bit lumpy. Serve with crusty bread or crackers. |
